There are no words for how impressed I am with this frying pan set by Made In. Full transparency, I have long been a big fan of this brand, but this set truly takes it to the next level.I have been apprehensive about cooking on stainless as it is notorious for sticking. Most of my cookware is cast iron or enameled cast iron to which I become very accustomed. Cast iron has a fairly predictable heating profile, retains heat, and is relatively non-stick. My experience with stainless, however, has been very different……until I found these pans.Out of the box, the pans are gorgeous and absolutely professional quality. They are ready to use as soon as you unpack them, but I chose to take the recommended added step of seasoning the pans in the oven with a light coating of oil before first use. This gave them a rich golden tone that I think makes the pans look even better.My first test was smash burgers. I would normally cook these on a griddle, but I wanted to see how the pans would handle ground beef which I’ve seen foul many a “non-stick” pan. Per the included guide, I preheated the pans dry before adding a small dash of neutral oil. Immediately I could see the oil go glossy and shimmery with even coverage over the pan. Not a lot of pulling from hot spots. Adding the smash burgers to the pan, I was able to get a perfect caramelized sear on every part of the pan. The fast, even heating was impressive.But even more impressive was giving the pan a shake and seeing the burgers slide across the surface. No sticking. No excessive frond. No peeling away of the perfect crusty sear. In the smaller pan, caramelizing onions was equally successful. For the first cook, they performed brilliantly.The pans are incredibly well built. The carbon steel layered construction is clearly a step-up from old-style pressed stainless steel. These pans are made for work and a lot of it. The handles are comfortable and ergonomic – giving you great control over shakes and flips. They also stay cool to the touch while cooking allowing you to make quick adjustments without the need to grab for a glove or a mitt. Probably most notably, for me at least, is that the pans are very light weight when compared to my cast iron set-up – yet I’d argue that they cook just as well if not better.This set gives you three very versatile sizes of pans – from the small 8″ omelet size to 10″ bistro size, to the large 12″ fryer. Each one is professional-grade and exceptional in its performance. I have paid well over $300 for a single cast iron pan, so the ~$400 price tag for this three pan set is an insane value in my opinion.
