One excellent option for easy vegetarian lunch recipes is to buy a good thermos and fill it with hot, savory soup. If you buy a well-insulated thermos, your soup should stay hot until lunchtime. There is nothing like a thermos-full of creamy broccoli soup or a rich cream of potato soup with some crusty bread on a cold day. And, cream soups are extremely easy to make and work well with almost any kind of vegetable. For any of these types of soups, the best way to start them is to saute some chopped onion in a little bit of butter in the bottom of a stockpot or Dutch oven.

Then, add a little bit of minced garlic and a bay leaf. Finally, add some chopped bell pepper, your main vegetable—either your broccoli florets or some diced potatoes—and cover with some low-sodium vegetable broth or vegetable stock. Add a variety of spices depending on the flavors you prefer. Some great options are allspice, pepper, salt, thyme, basil, and parsley. For potato soup, you might want to add some extra kosher salt since potatoes have a way of absorbing salt, along with some pieces of carrots for some added flavor and vitamins.

Cook all of this down until the main vegetables are soft. For broccoli soup, this should take less than fifteen minutes, while potato soup will take several minutes longer. Throw out the bay leaf—it’s a choking hazard if you leave it in your soup—and blend your soup with a hand-held immersion blender until smooth. Then, slowly whisk some cream or milk into your soup. You can also add some cheese if you prefer, which you should allow to melt. Pour the soup into your thermos while it’s still hot, and you’ll have a hot lunch that will get you through the rest of your day and your trek home.

Another option for easy vegetarian lunch recipes for cold days would be to pack some leftovers from the previous day to reheat in the microwave at work. Great options for vegetarian foods that reheat easily, still taste great the next day, and are great cold day comfort foods are pasta, including macaroni and cheese and any kind of vegetarian lasagna, and delicious breakfast foods that also make great lunches, including potato pancakes with a side of sour cream and applesauce, scrambled eggs topped with onions, bell peppers, and cheese, and even leftover blueberry pancakes. Serve any of these dishes with a side of fruit and granola or unsweetened yogurt for a filling, nutritious, feel-good lunch on a cold day.
