Another extremely easy recipe is an eggplant casserole. Slice a large eggplant and spread out on in a baking dish. Drizzle some balsamic vinegar over the eggplant and bake until soft. Then, coat the eggplant on both sides with bread crumbs that you have already mixed with onion powder, oregano, parsley, salt, and pepper. Place the coated eggplant in a casserole dish and cover with chopped bell peppers, slices of tomatoes, chopped red onion, and some minced garlic. Pour a jar of spaghetti sauce over the vegetables and cover with mozzarella cheese. Bake until the cheese is melted and starting to brown.
