After you’ve cooked your pasta, drain it, and return it to the pot. Stir in some diced or chopped tomatoes, some kidney beans, a jar of spaghetti sauce, and a little bit of sugar, salt, and pepper to taste. Then, pour this mixture into a casserole dish, top with shredded mozzarella cheese or fresh mozzarella cheese that you have cut into smaller pieces, and bake until the cheese is melted and golden. Not only is this meal a great source of calcium, but the beans add protein. And, if you use pasta that is enriched with nutrients, the pasta may also boost your protein, calcium, iron, and other essential vitamins.

Another extremely easy recipe is an eggplant casserole. Slice a large eggplant and spread out on in a baking dish. Drizzle some balsamic vinegar over the eggplant and bake until soft. Then, coat the eggplant on both sides with bread crumbs that you have already mixed with onion powder, oregano, parsley, salt, and pepper. Place the coated eggplant in a casserole dish and cover with chopped bell peppers, slices of tomatoes,  chopped red onion, and some minced garlic. Pour a jar of spaghetti sauce over the vegetables and cover with mozzarella cheese. Bake until the cheese is melted and starting to brown. While this recipe sounds very similar to eggplant parmesan, it’s actually both easier to make and better for you since the eggplant is never dipped in eggs nor is it deep fried.

A third option for a vegetarian casserole that is a little bit different from the others is a wild rice casserole. However, just like the first two recipes, this one is also extremely easy. All you need to do is take some uncooked wild rice and mix it with some sliced mushrooms, chopped onion, and minced garlic, and put it all in a casserole dish.

Then, pour vegetable broth over the whole thing, and bake until the rice is cooked. If you want to add something else to this dish, you can sprinkle some low-fat mozzarella cheese over the rice once it’s soft and cook until the cheese is melted. If you want to add extra vegetables or herbs to this casserole, you can choose whatever you want. Just make sure that you include enough vegetable broth to cover the entire casserole. Also, if you’re making this casserole for dinner, you should try pairing it with a garden salad to make a more complete, filling meal.
