Lemon Loaf Recipe With Lemon juice: Perfect Taste!!

Lemon Loaf Recipe is now in your Hand. Now I will show you details this recipes as I done it.  The addition of lemon juice as well as lemon zest to the batter makes this loaf very flavourful.  I have included directions for a glaze but not for icing as I don’t think the loaf needs any more sweetness.  This recipe makes one 8″ or 9″ loaf.

Ingredients: Lemon Loaf Recipe

Batter:

  • ½ cup butter, softened
  • 1 cup sugar
  • 2 large or extra large eggs
  • Zest of 3 lemons
  • ¼ cup lemon juice
  • 2/3 cup buttermilk (you can make it by adding 2 tsp of vinegar to 2/3 cup milk and letting it sit for 5 minutes)
  • ½ tsp vanilla
  • 1 ½ cups flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt

Glaze:

  • ¼ cup sugar
  • ¼ cup lemon juice

Directions:

  • Cream the butter and sugar until light and fluffy (3-4 minutes with electric beaters).
  • Add the eggs one at a time beating after each addition.
  • Stir in the lemon zest and vanilla.
  • Combine the buttermilk and the lemon juice.
  • Mix together the dry ingredients.
  • Add liquid and dry ingredients alternately to the batter, mixing well after each addition.
  • Pour the batter into a greased loaf pan (parchment paper on the bottom is recommended).
  • Bake at 350F for 45-55 minutes or until tester comes out clean.
  • In a glass measuring cup mix together the sugar and lemon juice for the glaze and heat in the microwave for approximately 1 minute until the sugar dissolves.
  • Cool the loaf for 10 minutes and remove from from the pan,
  • Poke holes in the top of the loaf with a skewer and drizzle with the lemon glaze.
  • Cool completely before serving.
