Lemon Loaf Recipe is now in your Hand. Now I will show you details this recipes as I done it. The addition of lemon juice as well as lemon zest to the batter makes this loaf very flavourful. I have included directions for a glaze but not for icing as I don’t think the loaf needs any more sweetness. This recipe makes one 8″ or 9″ loaf.
Ingredients: Lemon Loaf Recipe
Batter:
- ½ cup butter, softened
- 1 cup sugar
- 2 large or extra large eggs
- Zest of 3 lemons
- ¼ cup lemon juice
- 2/3 cup buttermilk (you can make it by adding 2 tsp of vinegar to 2/3 cup milk and letting it sit for 5 minutes)
- ½ tsp vanilla
- 1 ½ cups flour
- ½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
Glaze:
- ¼ cup sugar
- ¼ cup lemon juice
Directions:
- Cream the butter and sugar until light and fluffy (3-4 minutes with electric beaters).
- Add the eggs one at a time beating after each addition.
- Stir in the lemon zest and vanilla.
- Combine the buttermilk and the lemon juice.
- Mix together the dry ingredients.
- Add liquid and dry ingredients alternately to the batter, mixing well after each addition.
- Pour the batter into a greased loaf pan (parchment paper on the bottom is recommended).
- Bake at 350F for 45-55 minutes or until tester comes out clean.
- In a glass measuring cup mix together the sugar and lemon juice for the glaze and heat in the microwave for approximately 1 minute until the sugar dissolves.
- Cool the loaf for 10 minutes and remove from from the pan,
- Poke holes in the top of the loaf with a skewer and drizzle with the lemon glaze.
- Cool completely before serving.
