Old fashioned fish and chips baked in the oven for a tasty, low fat dinner. Start the chips 40 minutes before putting the fish fillets in the oven. Complete your dinner with the addition of coleslaw. Serves 4.
Ingredients: Oven Baked Fish and Chips Recipes
Chips:
- 4 large potatoes
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- ½ tsp paprika
- ½ tsp rosemary
Directions:
Scrub potatoes and cut into thick French fries. Toss with oil and seasonings Arrange in a single layer on a baking sheet.
Bake at 425F for approx 40 minutes, turning twice.
Fish:
- 1 lb fish fillets – sole, halibut or cod
- ½ cup flour
- ½ cup bread crumbs
- ½ cup cornflakes crumbs or panko
- 1 egg lightly beaten
- ¼ cup milk
- 2 tsp dry mustard
- ½ tsp salt
- ½ tsp thyme
- ½ tsp pepper
- 1 tbsp olive oil
Directions:
Rinse fish well and cut into serving size pieces. (If using frozen fish, thaw in milk first and then discard the milk.) Coat fish in flour, shaking off excess. Dip fish in egg and milk mixture. Combine bread crumbs, corn flake crumbs and seasonings. Roll fish in seasoned crumbs until well coated. Brush a baking sheet with oil and arrange fish in a single layer. Bake at 425F for approx 10 minutes, turning after 6 minutes. Fish is cooked when it flakes with a fork.
Hint: For a crisper crust on the fish, increase the amount of the corn flake crumbs and reduce the bread crumbs.
